How To

  1. Pre-heat your smoker to 200 degree Fahrenheit
  2. Rub eggplant halves with olive oil and sprinkle 2 teaspoon of salt
  3. Place the halves o smoker rack and smoker for about 1 and a ½ hours
  4. Remove and peel off the skin, discard it
  5. Transfer eggplant flesh to food processor
  6. Add tahini, garlic, lemon juice, 1/ a teaspoon of salt and blend well
  7. Transfer to a storage
  8. Stir in parsley and serve with pita chips
