Pre-heat your smoker to 200 degree Fahrenheit

Rub eggplant halves with olive oil and sprinkle 2 teaspoon of salt

Place the halves o smoker rack and smoker for about 1 and a ½ hours

Remove and peel off the skin, discard it

Transfer eggplant flesh to food processor

Add tahini, garlic, lemon juice, 1/ a teaspoon of salt and blend well

Transfer to a storage

Stir in parsley and serve with pita chips
