Preheat your oven to 400 degrees F

Coat muffin tin with liners

Take a large-sized bowl and stir in flaxseed, water, add apple sauce, sugar, coconut oil, vinegar, stir well

Add flour, quinoa, baking soda, salt, and stir well until just combined

Gently fold in cranberries without stirring too much

Add 1/3 cup of batter to each muffin tin

Bake for 15-20 minutes until top is lightly brown, let them cool for 10 minutes
