Take a large-sized pot and place it over medium heat

Add onion and mushrooms in olive oil and Sauté for 5 minutes

Make sure to keep stirring it from time to time until browned evenly

Add garlic and Sauté for 5 minutes more

Add vegetable broth, coconut cream, coconut almond milk, black pepper, and sunflower seeds

Bring it to a boil and lower down the temperature to low

Simmer for 15 minutes

Use an immersion blender to puree the mixture
