Preheat your oven to 400 degrees F

Take a baking sheet and line it with aluminium foil

Keep it on the side

Take a large bowl and add Brussels, shallots and dress them with olive oil

Season with salt, pepper and spread veggies on a sheet

Bake for 15 minutes until slightly caramelized

Remove the oven and transfer to a serving bowl

Toss with lemon zest, lemon juice, and pistachios
