Ingredients
  • 1 pound Brussels sprouts, tough bottom trimmed and halved lengthwise
  • 4 shallots, peeled and quartered
  • 1 tablespoon extra-virgin olive oil
  • Sea salt
  • Freshly ground black pepper
  • 1/2 cup roasted pistachios, chopped
  • Zest of 1/2 lemon
  • Juice of 1/2 lemon
How To
  1. Preheat your oven to 400 degrees F
  2. Take a baking sheet and line it with aluminium foil
  3. Keep it on the side
  4. Take a large bowl and add Brussels, shallots and dress them with olive oil
  5. Season with salt, pepper and spread veggies on a sheet
  6. Bake for 15 minutes until slightly caramelized
  7. Remove the oven and transfer to a serving bowl
  8. Toss with lemon zest, lemon juice, and pistachios
  9. Serve and enjoy!
