Ingredients
  • 1 pinch of salt
  • 1 pinch of pepper, ground
  • 1 tablespoon extra virgin olive oil
  • 2.5 cups of water
  • 2 cloves garlic, diced
  • 1 stick celery, diced
  • 1 potato, diced
  • 1 carrot, diced
  • 1 onion, diced
  • 1 bay leaf
  • 1/2 cup fresh flat, leaf parsley
  • 1 sprig fresh thyme
How To
  1. Take a large-sized saucepan and place it over medium heat, add olive oil and let it heat up
  2. Add vegetables excluding garlic and herbs
  3. Cook for 10 minutes, making sure to keep stirring from time to time
  4. Add garlic, fresh herbs, salt, and bring to a boil
  5. Simmer for 40 minutes
  6. Drain stock and use as needed
