Ingredients
  • 2 tablespoons coconut oil
  • 1/4 cup ground flaxseed
  • 1/2 cup of water
  • 2 cups unsweetened apple sauce
  • 1/2 cup brown sugar
  • 1 teaspoon apple cider vinegar
  • 2.5 cups whole wheat flour
  • 1.5 cup cooked quinoa
  • 2 teaspoons baking soda
  • 1 pinch of salt
  • 1/2 cup dried cranberries
Instructions
  1. Preheat your oven to 400 degrees F
  2. Coat muffin tin with liners
  3. Take a large-sized bowl and stir in flaxseed, water, add apple sauce, sugar, coconut oil, vinegar, stir well
  4. Add flour, quinoa, baking soda, salt, and stir well until just combined
  5. Gently fold in cranberries without stirring too much
  6. Add 1/3 cup of batter to each muffin tin
  7. Bake for 15-20 minutes until top is lightly brown, let them cool for 10 minutes
  8. Serve and enjoy!
