Ingredients
  • 2 celeriac, washed, peeled and diced
  • 2 teaspoons extra-virgin olive oil
  • 1 tablespoon vegan honey
  • 1/2 teaspoon ground nutmeg
  • Sunflower seeds and pepper as needed
How To
  1. Preheat your oven to 400 degrees Fahrenheit
  2. Line a baking sheet with aluminium foil and keep it on the side
  3. Take a large bowl and toss celeriac and olive oil
  4. Spread celeriac evenly on a baking sheet
  5. Roast for 20 minutes until tender
  6. Transfer to a large bowl
  7. Add honey and nutmeg
  8. Use a potato masher to mash the mixture until fluffy
  9. Season with sunflower seeds and pepper
  10. Serve and enjoy!
