Ingredients
  • 3 cups of green onions, diced
  • 2 cups of mushrooms, sliced
  • 3 teaspoons of fresh ginger, grated
  • 3 teaspoons of garlic, minced
  • 2 cups of bok choy, chopped
  • 1 tablespoon of cilantro, chopped
  • 3 tablespoons of carrot, grated
  • 1 can of each of diced tomatoes and peppers (or freshly prepared)
  • 6 cups of vegetable broth
How To
  1. Add the listed ingredients (except green onions, carrot) to a saucepan and bring the mix to a boil over medium-high heat
  2. Lower heat to medium-low and cook for 6 minutes
  3. Stir in green onions and carrots and cook for 2 minutes
  4. Sprinkle cilantro and serve
