  • 4 cups English cucumbers, peeled and diced
  • 1/2 cup onion, diced
  • 1 tablespoon lemon juice
  • 1.5 cup vegetable broth
  • 1/2 teaspoon salt
  • 1 avocado, diced
  • 1/4 teaspoon dried pepper flakes
  • 1/4 cup parsley, diced
  • 1/2 cup cashew cream
How To
  1. Add the listed ingredients to a blender and emulsify by blending them (except ½ a cup of chopped cucumbers)
  2. Blend well until smooth
  3. Pour into 4 servings and top with remaining cucumbers
